My son started a gf/cf diet last year and within a few weeks he started to use more words but it could be coincidence because he started school around the same time. Didn't you see any differances in your son's behaviour? You only mention blood levels.
I took my son off the gf/cf diet after 6 months because the doctor at school was worried he wasn't getting a balanced diet. After a time he didn't seem to be progressing as well on the "normal" diet as on the gf/cf one: the progression he had started to make in 2 word sentences stopped, but it seems very gradual, but this is just my son: it seems that there are so many possible causes of "autistiform behaviour" that your son's could be due to something else.
I would love to hear from you if you, as a dietician, think that it is a problem for children to eat gf/cf, or do they need supplements?
