hi ola:

this recipe has yeast and sugar, which i am eliminating next in john's diet. however, i heard that equal substitutes of baking powder for yeast will work. let me know if you found out something different.

1 1/4 cups GF flour-mix
1/4 cup potato starch
2 TBSP Vance dari-free
1 1/2 tsp baking powder
1 tsp. xanthum gum
1/2 tsp. salt
1 tsp sugar
7/8th cup of warm water
1 TBSP rapid-rising yeast
1 egg or 1/4 cup liquid substitute
1 TBSP veg oil

i throw it all together, this is how. i put all the dry ingredients (except sugar) in one bowl. than the warm water, sugar, and yeast in another. let that sit for a couple of minutes, (or with me, whatever), than mix the egg and oil in, than throw it in the dry ingrediets. mix that all together, than i divide it onto two 9-inch pizza pans, spread out, let sit 10 minutes. than put the sauce and meats, etc on, wrap it up throw it in the freezer. i prepare everything for the week, so it's east to pull out and cook. bake at 425 degrees for approx. 25-30 minutes. i like to make sure the crust on the bottom is brown, so it is not mushy. this crust is the closest i have gotten to a "real" one.
