Dear Chris,

One thing I wish I had been told when I first started the "diet" well over a year ago now (with great results)is that it is important--if not imperative--to rotate the foods that you use to replace the Gluten-Casein items with. In other words, the mistake I made was to let my daughter have all the rice products (namely pastas), soy and potato products that she wanted and voila she developed intolerances to them as well. As a result, I advise rotating common ingredients--such as the ones I just mentioned--every four days (at least). For ex: a rice product/chicken/carrots (or whatever) day; then another grain, another protein, another vegetable the next day etc. Also, be aware that corn--though it didn't show up on any allergy testing for my daugher--proved to be HIGHLY sensitive for her. There is some debate as to whether or not corn has gluten, so I recommend assuming it's a problem, taking your child off it for several months then reintroducing it to see what happens. (FYI, iodized salt or anything with Dextrose, has corn). I hope this helps. IT's what I wish I had known.
