Hi Chris, We put Andrew on a gf/cf/sf diet in October and it has changes his life, so hang on you're in for quite a ride. My first suggestion would be to find a time when you can go to a health food store all by yourself and look around, read labels and ask tons of questions. Once you understand the alternative ingredients that are available it is pretty easy to substitute into your recipes you already use. I use a lot of bean flours, they have tons of protien which is a major plus. I also have an all natural sweetener I use called sweet balance. Usually when a recipe calls for milk you can substitute water in and it works just fine. I go through a Dr. in Chicago to oversee Andrew's diet and they have just published a cookbook. It is written by moms just like us, who have their kids on gf/cf/sf diets. I haven't received mine yet, but when I do I'll let you know how it is. I know it seems overwelming now, but once you educate yourself and do some trial and errors on your cooking it is manageable and definitely worth it. I went to an appointment the other day with a nutritionists (it had nothing to do with Andrew) but we started talking about the diet and I was telling her all the things I have learned. She asked me if i have ever considered becoming a nutritionist. I didn't know anything before the diet so don't be intimidated, it is possibel to learn it all.
