: well i am asking for "big" help. i am getting armed and ready to do a gluten/casein diet for john. we are working with a DAN doctor and still waiting on test results but i am convinced there is a need so want to be ready.
: so am asking for help. anyone interested in sending a "simple"???? recipe? i have a child with extremely limited food likes, (potato chips, pretzels, crackers, bacon, pizza, and french fries).

Congratulations on your decision to give this recipe a try! We are very pleased with the differences that we have seen in Nick since starting this diet. He actually told a freind the other day that he is on a special diet. When the friend asked why, he said that gluten and cassein are like poison for him and he is no longer dumb like he was last year! Once Nick realized it was the diet that was helping him feel better he wanted to stay with it.
The good news is that the "limited" diet you talk of actually has a lot of gf/cf stuff, everything but the pretzels and pizza, so you just need to get rid of those two. You just have to check the labels on the other stuff to be sure there is no gluten or cassein. McDonald's fries are supposed to be OK, though you are encouraged to be sure they use only one frier for fries and don't cook any of the breaded stuff in it. There are also some great rice crackers. Do you have a Trader Joe's near you? They have very reasonably priced rice crackers. Some other things they have include chicken taquitos and turkey sticks that taste like pepperoni.
Nick used to love pizza, and we have found a substitute that he loves called mochi. Mochi cames in different flavors, and pizza is one of them. You can find this in the health food store. All you have to do is cut it into squares and bake it in the oven for about ten minutes.
Nick also loves bacon, so much so that we get the kind without sodium nitrites in the health food store. We have tried a pizza from Lisa Lewis's cookbook but it wasn't too popular with Nick. I thought it was OK, but he hasn't asked for it.
